醬釉又稱(chēng)：“柿色釉，紫金釉”，是一種以鐵為呈色劑的高溫色釉，其釉料中含氧化鐵和氧化亞鐵的總量較高，達(dá)5%以上。醬釉的出現(xiàn)始創(chuàng)于北宋的北方窯口，如定窯、耀州窯等窯場(chǎng)中均有燒造，以定窯醬釉最著名。明曹昭《格古要論》中“有紫定色紫，有黑定色黑如漆，土具白，其價(jià)高于白定”的論述。所謂紫定并非紫色，其釉呈棕紅色，實(shí)際上與今天芝麻醬色調(diào)相近的釉，故而得名。提起醬釉，往往給人以含糊的感覺(jué)，有人通稱(chēng)為“紫定”。但可以肯定，古人是能夠從直觀視覺(jué)上辨別這些顏色的。還有人將醬釉稱(chēng)為“絳釉”“赫釉”“赭釉”“褐釉”等，這些顏色在古代文獻(xiàn)中也有明確記載。至于用“醬色”來(lái)形容瓷器釉色，其概念含義本身也是十分寬泛的，令人難以界定出準(zhǔn)確色位。以醬類(lèi)作料的代稱(chēng)作為顏色名詞使用似乎出現(xiàn)得較晚。清代以后，醬色已經(jīng)是與紫、紅、青、綠、黑等并列的顏色專(zhuān)有名詞了。
