醬釉又稱(chēng):“柿色釉,紫金釉”,是一種以鐵為呈色劑的高溫色釉,其釉料中含氧化鐵和氧化亞鐵的總量較高,達(dá)5%以上。醬釉的出現(xiàn)始創(chuàng)于北宋的北方窯口,如定窯、耀州窯等窯場(chǎng)中均有燒造,以定窯醬釉最著名。明曹昭《格古要論》中“有紫定色紫,有黑定色黑如漆,土具白,其價(jià)高于白定”的論述。所謂紫定并非紫色,其釉呈棕紅色,實(shí)際上與今天芝麻醬色調(diào)相近的釉,故而得名。提起醬釉,往往給人以含糊的感覺(jué),有人通稱(chēng)為“紫定”。但可以肯定,古人是能夠從直觀視覺(jué)上辨別這些顏色的。還有人將醬釉稱(chēng)為“絳釉”“赫釉”“赭釉”“褐釉”等,這些顏色在古代文獻(xiàn)中也有明確記載。至于用“醬色”來(lái)形容瓷器釉色,其概念含義本身也是十分寬泛的,令人難以界定出準(zhǔn)確色位。以醬類(lèi)作料的代稱(chēng)作為顏色名詞使用似乎出現(xiàn)得較晚。清代以后,醬色已經(jīng)是與紫、紅、青、綠、黑等并列的顏色專(zhuān)有名詞了。

As for the use of "soy color" to describe porcelain glaze color, the concept itself is very broad, it is difficult to define the exact color position.
